Being a parent isn’t easy. We try so hard to provide our children’s growing bodies with nutritious foods, but often their taste buds reject anything “healthy.” Case in point — how many times have you slaved away preparing your child’s lunchbox, only to find it barely eaten when they get back from school? Remember those uneaten celery sticks? How about those rejected kale chips?
Pre-packaged snacks are often loaded with added sugars and preservatives and low on actual nutrition. Here are some snacks that the kiddos will love, plus they’re a snap to make, easy on the pocket-book, and are loaded with nutrients.
Chickpea Beet Cookies
1 (15 oz) can chickpeas, drained & well rinsed
½ cup nut butter of choice
4 Medjool dates, pitted
¼ cup old-fashioned oats
¼ cup raw honey
1 ½ tsp Organic Beet Juice Powder
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
Pinch of salt
Preheat your oven to 350°F. Combine all the ingredients, in a food processor and process until very smooth. Spoon dough onto a cookie sheet lined with parchment paper. Bake for about 10 minutes and let cool another 20 minutes before eating.
No Bake Berry Nutty Granola Bars
1 cup Medjool dates
¼ cup raw honey
¼ cup nut butter of choice
1 cup roasted almonds
1 ½ cups old-fashioned oats
1 tbsp Organic Berry Power™
Line 8 x 8 inch baking dish with parchment paper. Process dates in a food processor until doughy. Put date dough in a bowl, add the remaining ingredients, and mix well. Put mixture in lined baking dish and press down firmly until flattened. Cover and place in fridge for about 20 minutes or until firm. Remove from baking dish and cut into bars.
