Overnight oats are a busy person’s secret to a healthy, fiber-rich breakfast. This get-up-and-go breakfast combines fiber (oats), antioxidants (Organic Berry Power™ and pomegranate), and probiotics (from yogurt) for a meal that will fuel your day. Plus, soaking the oats overnight gives them a lovely texture and makes them easier to digest.
Makes 1 serving
1/2 cup rolled oats
1/2 cup pomegranate juice
1 tsp Organic Berry Power™ powder
1-2 tsp raw honey (or to taste)
1/2 cup Greek yogurt or coconut milk yogurt
Toppings: fresh berries, granola, nuts, seeds, coconut flakes
Add all ingredients, except yogurt and toppings, to a mason jar and stir. Layer yogurt and toppings, refrigerate overnight. Stir right before enjoying this delicious breakfast.
